A demo model that quite simply explains the challenge of applying average calculations on a very dymamic system.
Run the model with constant time distribution (of the processing times) and you will see no problems. This corresponds to your "standard" average calculation in a spreadsheet.

Then run the model with an aggresive exponentional distribution of the process time. Although the average is the same, the outcome is definitely not the same.  
Then play with the buffer size to decouple the two systems....
